Flan Pâtissier à la Sang

Sharing an offal (context: google offal at caution if you are vegan) recipe here that I intend to try. I will post an update when I do!

Blood Custard:



  • 2 cups (500 ml) milk
  • ½ cup (125 ml) sour cream / crème fraîche
  • 100 ml (or slightly less than ½ cup) blood (goat, beef, or pig)
  • 1 vanilla pod (or vanilla extract)
  • 80 grams caster sugar
  • 1 Tbsp unsweetened cocoa powder
  • 50 grams cornstarch


Pastry Dough:



  • 1½ cups flour
  • 1 Tbsp brown sugar
  • ¼ tsp salt
  • ¾ cup (180 ml) cold unsalted butter, diced into small cubes (alternatively lard)
  • ¼ cup (60 ml) milk
  • 1 egg yolk (optional)
Prepare pastry dough in standard method. Or just. Buy it.

Flan:



  1. Sieve the blood to remove any clots.
  2. In a small bowl, mix the corn starch and about half of the blood until there are no clumps.
  3. In
    a sauce pan, pour the rest of the blood, the cream, sugar, cocoa, and
    vanilla, as well as the blood / cornstarch mixture.
  4. Turn the heat to medium high and bring to a simmer while whisking continuously until thickened.
  5. Pour the cooled custard into the crust.
  6. Place
    on a baking sheet and bake for about 40 to 45 minutes or until custard
    is only slightly wobbly. Set the oven to broil and caramelize for about 5
    minutes or until surface of custard is partially burnt.
  7. Remove from the oven, allow to cool, and then refrigerate for 6 hours. De-mold.
