Give me unique ice cream flavors

I want to take advantage of my ice cream maker. So far I have made maraschino cherry and fudge ice cream and banana pudding ice cream. I have the idea for a pepper jelly ice cream but I don't know where I can buy any homemade jelly so that'll be awhile 


Anyways are there any flavor ideas you guys have? Basically I wanna make flavors that you usually don't see in stores or are only served as a huge over the top milkshake or sundae that can feed three people.

my mom bought this glazed lemon pund cake flavor ice cream. i have yet to try it, but i imagine it tastes like lemon pound cake lol

I knew a place down in Texas that had a ton of wacky and cool flavors. Two that I remember are honey-vanilla and roasted beets. I think there was also one with basil. The place was called Lick Honest Ice Cream if you want to find out their flavors. Stuff was good!
