Recipes! Meat I get it.. but how do you do it?

My wife loves brisket so I have smoked many many many of them. simple salt and pepper and into the electric smoker at 195 with some wood chips for oh a total of about 10 to 12 hours. then into the cooler to "rest" for 2 hours. Looks something like this.. not my pic just an example of good lookin brisket
