Veggie Omelet

This veggie omelet is great for its low sodium (~300mg), lots of veggies, and is dairy free (almond milk ftw!)

Ingredients

  • 1/4 cup, chopped onion
  • 1/4 cup, chopped red bell pepper
  • 1/4 cup, chopped green bell pepper
  • 3 cherry tomatoes
  • Splash of olive oil
  • 3 large eggs
  • Splash of unflavored, unsweet almond milk
  • Dash of black pepper

Steps

  1. Chop the onions, bell peppers and tomato.
  2. Saute the vegetables in olive oil in a non-stick, spread the vegetables around the pan.
  3. Beat the eggs, almond milk, salt, and pepper together. Pour over the vegetable mixture.
  4. Cook on stove for about 5 minutes, until the eggs are set on bottom.
  5. Fold cooked egg into omelet, serve on a hot plate.
