i suck at intros but here it goes 


i love food, as we all do, and i enjoy cooking/baking, using my hands, concentrating on my projects, and the rewards at the end. 


anyway.. 


to start off this new post i wanted to share a pumpkin pie recipe that I love so much. It's really simple, and cost effective.


i mean thanksgiving is coming up and what better way to show appreciation than to share the things that make us happy. 


ok so basically it goes like this 


Combine into a bowl... 

2 cups or 453g of pumpkin puree, oven baked or steamed or canned

1 cup or 300g of lechera 

2 eggs 1 yolk

¾ tsb of pumpkin pie spice mix

Vanilla extract

Pinch of salt 

Whisk until well incorporated then pour into pie crust 

Bake at 325 for an hour and 20 minutes



as for pumpkin puree, you can get this at any supermarket right, they sell a 15oz can which is perfect for this recipe.


or you can get a mini pumpkin and make the puree yourself which is what i typically do, they sell them again at any supermarket during the fall season.


all you do is cut them open, scoop out the seeds and guts. 

peel the outer layer and then cut them into manageable pieces, not to small

then i steam them until fork tender. they should be very soft. 

you can also place them on a baking sheet after you have de-seeded them, oil them and bake until fork tender. the outer layer should peel right off. 


either method works well.

 

once soft, you can put them in a blender or use and emulsion blender then puree it. 


boom homemade pumpkin puree. i use the extra to add into my coffee, and my dogs food 


another note is that i believe the sweetness of the lechera can be to taste. I tend to down play it so i recommend before adding the eggs in !! important part, just give it a taste. Is it too sweet, not sweet enough ? i think a cup is good but thats my opinion.


its really easy to modify it to your taste, you can do the same for the spice mix as well. but again taste before you add the eggs 


last note i'll give is that everyones oven works differently so keep an eye out once you hit that hour mark


and boom y'all got yourself a spanking pie for thanksgiving.
