For me it's a three-way tie for Metro: Last Light, Fallout: New Vegas, and Borderlands 1.
Fallout: New Vegas, particularly on the PC is phenomenal, as you can mod it, and the story is second best in the franchise (Fallout 2 is only slightly better) and it's gameplay is amazing.
Last Light is a really good game, with amazing story, I've cried playing that game getting the good ending.
Borderlands 1 is the best borderlands imo, it's story isn't in your face, and the characters all have depth.
My runner-ups are Cyberpunk 2077, OuterWorlds, and Animal Crossing: New Horizons. But I didn't want to include new games because I have a tendency to have Recency Bias over that of Nostalgia.

I have a few favorites but one memorable one was 'White Knight Chronicals' it was an entire new experience for me. Think it was my first online multiplayer game.

In terms of beautiful soundtracks: Halo 3 and Halo ODST, and the Destiny series. Most of Bungie's scores are amazing. With that said, they are some of my favorite games.
If I had to choose a top 3 list: Mass Effect series, The Elder Scrolls, and Final Fantasy 15.

I love all of the Mario Kart games.
My favorite fighting game is Tekken 3/Tekken Advance
My favorite "always in the mood for" game is probably COD MW3
But my favorite game is probably Twisted Metal 3, almost entirely because of the soundtrack

My favorite games are all now dead as they were once MMOs. Out of games currently active or single player? Skyrim. Simply, for the immersion. It's amazing, man.

Lately it's been Noita. It's like those old 'falling sand' games, except you have a character and enemies and bosses and everything. If you've never played falling sand games, they're flash games where a pixel of a certain material is simulated and can interact with other materials, and produce sided effects. That happens in Noita, some of the effects are boring but functional (think +10Attack/Defense) but it can quickly get wild.
Its a 2d platformer roguelike, so it gets difficult, but it's got an insanely customizable wand system. The wand system is half the fun. You can become an absolute god with the right tinkering.
There are tons of mods that make the game a lot easier if high difficulty isn't your thing.

I grew up on dress up games as a kid so therefor my favourite game is the sims which is basically a glorified dress up game
