Hi everyone, thought I would post this since my mom asked me to send it to my cousin yesterday so I had to type it up anyway. And it's the season. My nonna used to make these; she used to send them to me when I was at university (and then my stupid roommates/bf would eat them all so I'd have to make them myself anyway). She would sometimes use carob instead of chocolate chips.
Anyway nothing complicated, but something easy and yummy for your autumn parties.
1 cup canned pumpkin
3/4 cup sugar
1 stick butter melted (1/2 cup)
1 egg
2 tsp vanilla
2 cups flour
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp salt
1 tsp baking soda
chocolate chips (as many as possible)
Preheat oven to 350F. Combine the WETS. Combine the DRIES. Mix the dries into the wets. Add the chocolate chips (or whatever substitute, but I like dark or semisweet chips personally). Spoon in a cookie shape and size onto a cookie sheet and bake for 10-12 minutes. The cookies will be fluffy and cake-y in texture.
