It happened only once to me. Rewatching High Score Girl after a few months, made me ask why I've liked so much the first time I watched it. In my first time watching HSC, I literally thought I've found perfection.

ouran high school host club, when i rewatched it, it just felt uncomfortable in ways i never noticed before.

oh god quite a few i used to watch anime like breathing air a few years ago
to name a few i hate now...probably 'is it wrong to try to pick up girls in a dungeon', 'free!', and 'blend s'
the first one is just a harem and bland, free! is very boring, and blend s is very uncomfortable after you graduate high school, develop a frontal lobe, and realize oh! those are children in maid's uniforms catering to the sexual fantasies of adult men!

That happens cuz your taste in media, story delivery etc got more developed and refined the older you got and the more life experience you got.
I used to think the show Final Fantasy Unlimited was cool, but when I re watched it as an adult, I got upset that the summoning scenes was constantly replicated and repeated per episode. Like I get that the show wasn't meant to be binged cuz it was made for 1 TV episode per week and that 2D Animation back then was very hard to do, but still. This is also probably the reason I don't like other Anime with the same repeated transformation or summoning animation scenes much these days. It bores me easily now, so often I skip those scenes just to get to the rest of the show ^.^
I also used to think the anime Ghost Stories was interesting - but at the time I viewed it in Spanish. When I watched it in English as an adult, I was horrified and disturbed. I can't tell if that was the real dub or if it was a troll who stole the show to trash it as much as possible for whatever reason. Ended up hating the anime because of the English dubbing. It wasn't funny at all.

I used to watch harem anime because that's what my guy friends are into, but seeing it how it is now, I really don't like them. :/
Toradora is surprisingly the only -dere anime that has good writing.
conversely, I became appreciative of older hated anime. I realized Sword Art Online's hate was overblown. Black Clover is not as bad as I thought it would be.
