help editing layouts?

i specifically want to know how to edit the text of the categories for interests. i don't have many movies i care a lot about (same goes for heroes and music)

i've seen people add custom ones on their blogs and change the existing text so i  know its possible, but i'm not tech savvy enough to figure it out myself :(

(also looking for other resources on editing layouts, i have a few layouts that i want to make just for fun but am still not great at html)
