How do you keep kosher while also maintaining your other cultural foods 

I'm Mexican and almost every meal is meal is meat and dairy together and pork 

How do you essentially make non-kosher foods kosher

I am not kosher, but I do cook kosher for my own family. It definitely needs planning around, mostly subsitutions. I would look into vegitarian versions of dishes already to see what you can find, you can also look into exhisting Jewish Mexican groups and see if they have any tips or dishes that you are gonna run into. I definitely recommend writing stuff down and you are most likely going to have to experiment with exhisting dishes. Good luck!

seconding what river said. they key is finding how to alter the recipe with substitutions imo. for majority of dairy products you can find a non-dairy alternative and for pork depending on the cut of meat you can always use a different kind of animal!
