I’d recommend the headphone accessory/bookmark/cable tie leaf sprout. You get to do most of the basic stitches and it’s great for learning them. It was my first project ^o^

I think plushies are awesome for beginners! It's an awesome way to learn about the basics and the endresult is enjoyable too. Maybe you could try something like a bear. 

Aside from plushies you could try to crochet a beanie. It's simpler and you don't need extra material like eyes or wadding.
