I like to jazz up some mac n cheese by throwing meat and other stuff in it (liquid smoke, etc). Ditto for ramen, add some eggs, veggies, different seasonings.

I usually add some heavy cream in my coffee or strong tea, so it sort of becomes a meal on its own .. but if I'm in a kitchen mood and don't want anything complicated (also trying to stick to lower-carb foods):

  • Simple omelette, often with cheese but you can throw pretty much whatever you have on-hand in there. Spinach, mixed vegetables, sausage/bacon .. etc.
  • Simple soups with a mirepoix base, usually chicken but I'll use whatever broth is on hand. Rule of thumb here is fat + salt = flavor, so fat + mirepoix + boullion + meat or veg = good food.
  • Something I've been kind of addicted to lately that's more on the decadent side: Full fat unsweetened/flavored greek yogurt + heavy cream. Whip it together until it's ultra-smooth, add chopped fruit (I chose strawberries) and fold it in. Top with dry cereal of your choice (I choose chocolate flakes). Pretty good and filling for a while, but try not to overdo it if you don't want a mad tummyache.
