spirituality and religion etc

my beliefs align with eastern based religions more and i want to figure out how to practice or "convert" to another religion without going full on into the practice. i like buddhism a lot, but i cant go vegetarian/vegan, its too hard for me. would it still be respectful to start research and practice some aspects of this religion without being completely religious or without following every "rule" ?

from what i understand buddhism is a non-theistic religion so a lot of ppl consider it a way of life if that helps

I'm not sure it's a requirement to be vegetarian. I would look for a worship community near you. Though, having grown up in a rural area, I know these communities aren't always nearby.
